당질은 단순당과 복합당으로 구분.
단순당은 설탕, 꿀, 엿 등 단맛이 강한 식품들에 들어있다.

복합당은 단당류가 결합한 탄수화물로 단맛이 나지 않고 소화와 흡수가 느려 혈당 상승 곡선이 완만한 특징이 있다
