Western diets are skewed towards abundant omega-6 fatty acids and scarce omega-3s. Omega-6 is metabolized into arachidonic acid, the middleman to inflammatory eicosanoids. When generated excessively, these eicosanoids can artificially amplify inflammatory signals.
