Accidentally forgot to tweet this excellent Cornish cuttlefish cooked over fire with pimentón vinaigrette and aioli at Cor. They sure know how to treat a cephalopod at Cor, and I don't mean movies and then a candlelit meal (probably at Cor, like some absurd Circle of Life scene).

Onion, building block and supporting role of so many dishes, was given top billing at Cor, where glistening petals of Tropea onion - sweet and pointed like a tulip - came drenched in beurre blanc, a tweak of aged balsamic, more of that runny gorgonzola and a rubble of hazelnuts.

Within the last week I have enjoyed cafe de Paris slathered on oyster and snails at Whyte's, scallops at Root, and now Cornish mids at Cor. I can't think of many foods the piquant, herbal butter wouldn't improve. Maybe tiramisu, though I'm sure a chef in Hackney is working on it.

Cor's famous dish of cannellini beans, the nutty softened ellipsoids mostly a vehicle for an enveloping satiny, lemon-forward beurre blanc, smoky pops of caviar & the crunch of panko, is as much a mainstay as Chef Mark. Only you can actually find them in the restaurant sometimes.

Much of what we consumed at Cor featured liberal (aka restaurant) quantities of butter & cream -absolutely no criticism - so it felt prudent to order one dish w/ a veil of lightness (tho lightness is, of course, subjective): cured Devon scallop, granny smith, pickled fennel, dill
