Mushroom Risotto #easycooking

Slow fry thinly diced onion, celery

Add rice and a slug of white wine & frozen peas

Add ladles of stock a bit at a time & stir for 15 / 20 mins

Fry chopped mushrooms in butter with some thyme

Add to rice with grated cheese, cream, lemon juice
