Warming up a couple of @kingcoleducks smoked breasts in a bit of butter. Gonna I’ve these bad boys thinly and serve them atop a warm fall of roasted , pine nuts, shaved and wilted arugula. Finish it all off with a maple and balsamic dressing.

The pekin duck leg for our Anatra Brasata is sourced from @kingcoleducks. We dry-age the meat for 12 days then braise it. Served with summer minestra, borage and finished with the brodo from the duck leg.
