CDR's newest cheesemaker, Ian Kozaczek, is now trained as an Industry Analyst for Appendix N Antibiotic Screening! 👏

He can now screen incoming loads of raw milk. This is an important job as it ensures that CDR is complying with Appendix N and is producing safe dairy products.

Participants in the Cheesemaking Fundamentals Short Course were in the pilot plant for a hands-on cheesemaking session. This course covers basic cheese manufacturing science, principles of moisture and pH, basic mathematical calculations commonly used by cheesemakers, and more.

I was proud to secure resources for the Wisconsin dairy industry to help our processors and farmers innovate their products, reach new markets, and grow our economy. It was great to be with Center for Dairy Research today to see their work in action!
