Omelette x 2. One is a leftover Tortilla de Patatas from Chef John and the other is 3 egg omelette from our birds with our own peppers, garlic scapes and chives, fresh spinach and mustard greens. Perfect.

Start by rendering chorizo. Add butter and spices using Chef John golden butter rice technique. Add saffron water and scallops. Voila! Cheater paella!

Dinner tonight is Chef John Chicken Tikka Masala and Golden Butter rice. Only regret is buying off the shelf, national brand, naan. This meal deserved proper naan.

I’m going to plan these again for a weekday meal sometime because of the fairly quick prep and cook time but Chef John Arayes was my choice for dinner this evening because they looked so delicious I just couldn’t wait to try.
