Weekend in Cardiff with Tim Pontin and better halves. Splendid meal at Asador44 last night. Been looking forward to coming here for a while after seeing Kris Ablett reviews. Staying at Parador44 hotel above the restaurant which is also top notch. Bar44 for tapas this evening.

Lemon SPG Buttermilk Fried Chicken, Tower burgers.

These were by far our best efforts yet.

The chicken was brined for 24 hours in buttermilk, egg and some The Smokey Carter™ Lemon SPG

Then following Kenjis crispy chicken method, with a brown paper bag.

Low n slow st louis style ribs seasoned up with our Buffalo Dust BBQ Rub and finished with our Original Buffalo Hot Sauce 👌 These tasted awesome! The honey burnt a little as the KJ got too hot whilst I was making mac n cheese. Still fall off the bone tasty 😋

Baby back ribs time.

Decided to try cooking without wrapping

I rubbed each with The Smokey Carter™ Texas Ranch, smoked with some apple wood and misted with apple juice every 30 minutes.

Then just before saucing, I sprinkled with Orange powder from an orange we dehydrated.

Beef brisket birria tacos tonight, smoked for 4 hours on the Louisiana Grills vertical smoker, then transferred to a slow cooker for 6 hours.

Cooked Greek-Style Lamb Shanks with a Greek Salad 🇬🇷

I slow cooked these on the WSM with some cherry wood-chunks. Gave them a 2 hour smoke and then braised for 3 hours! They were fall apart when plating up!

Also made some Houmous to go with this!
